Vanilla Flowers Bloom Once
This is where every vanilla pod begins. The vanilla orchid opens for a single morning, and if it isn’t pollinated within a few hours it drops and that flower is gone for the year.
Outside of Mexico there’s no native bee to do the job, so every single flower is pollinated by hand, one at a time. From there it takes around nine months on the vine before the green pods are ready to pick, then months more of curing and drying before they become the glossy vanilla pods you split into your custard.
Now you know why real vanilla is really worth it.
